Banana Bread, the gf, vg kind

What you’ll need:

  • 2 ripe bananas + 1 for topping

  • 2 flax eggs (2 tbsp ground flax + 3 tbsp water, let sit for 5 min)

  • 1/3 cup coconut oil, melted

  • 2 tbsp maple syrup (or honey)

  • 1 tsp cinnamon

  • 1/2 tsp sea salt

  • 1/4 cup coconut flour

  • 1 1/2 cup almond flour

  • 1/2 tsp baking soda

  • 1/3 cup walnuts, chopped

  • 1/2 dark chocolate bar, chopped

Directions

— Preheat your oven to 375 degrees. In a large mixing bowl, use a fork to mash two bananas. Mix in flax eggs, coconut oil,

maple syrup, cinnamon, and salt.

— Stir in coconut flour and let sit for a minute. Then stir in the almond flour and baking soda.

— Mix in walnuts & chocolate and add to an oiled bread pan or small baking dish.

— Top with sliced banana, nuts, and/or seeds.

Tip: Mix your sliced banana in coconut oil, cinnamon, and a little maple syrup for a caramelized take.

— Bake for 35-40 minutes, then turn off the oven and let it sit in there for 15 more minutes.

— i let it stay out on my counter for a few days before i put it in the fridge.
